Buddy the Elf Cupcakes

One of my favorite scenes from Elf is the scene where Buddy makes his dessert spaghetti as he is talking to his Dad on the phone. This scene inspired the design and taste of this cupcake. It’s an Apple Spice Cake with Maple Frosting and a caramel center.

Apple Spice Cake

3 Eggs

1 ½ Cups Apple Sauce

½ Cup Vegetable Oil

⅓ Cup Water

1 tsp Vanilla Extract

2 ½ Cups Gluten Free Flour

¾ Cups Sugar

⅓ Cup Brown Sugar

1 ½ tsp baking soda

1 ½ tsp baking powder

½ tsp salt

2 tsp Apple Pie Spice

1 ½ tsp Ground Cinnamon

Caramel Center

½ Cup Earth Balance Vegan Butter

1 Cup Brown Sugar

¼ Cup Corn Syrup

½ tsp Salt

3 tsp Vanilla Extract

3 tsp Baking Powder

Maple Frosting

2 Stick Earth Balance Vegan Butter

1 tsp Vanilla Extract

¼ tsp Maple Extract

3-4 Cups Powder Sugar

Preheat the oven to 350 degrees.

In a large mixing bowl put in your eggs and mix together. Add in your apple sauce, oil, water, and vanilla extract then mix together.

In a separate bowl add in your flour, sugar, brown sugar, baking soda, baking powder and salt. Mix together then slowly add in your dry mixture to your wet mixture and mix on medium for 3 minutes.

Place liners in cupcake tins and at ¼ batter to each liner. Place in oven and bake for 20 minutes.

Once your cupcakes are cooled, start making the caramel sauce. Add in your butter, brown sugar, corn syrup, and salt to a pot and place on the stove at medium heat. Mix occasionally and leave on the stove until your mixture is at a rolling boil. Remove from heat and whisk for one minute then add in your baking powder and vanilla extract and mix together. Let Cool. While cooling core the center of your cupcakes (I typically use my cupcake corer tool but you can also use a knife to cut out the center). Put caramel in the center of each of the cupcakes.

Start making your frosting. Add your butter to your mixer and mix until the butter looks light and fluffy then add in your vanilla and maple extract then mix together. Add one cup of powder sugar and mix between cups. Keep adding powdered sugar until your frosting forms stiff peaks. Then decorate your cupcakes anyway you choose. I personally like to use my piping bag and Wilton piping tip #233 to create the spaghetti noodles.
