Blogmas Day 1 (Home Alone Brownies)
Home Alone Brownies

One of my favorite treats during the holiday seasons are my Home Alone Brownies. They are Fudge Peppermint Brownies topped with peppermint frosting and dye free candy canes. My favorite dye free crushed candy cane is Atkinson’s Mint Twist. For any brownie recipe I recommend hand mixing only and not using an electric mixer. This prevents over mixing and will help you have a more dense fudgie brownie vs the cake like fluffy brownie.
Brownies
5 Eggs
1 Cup Vegan Earth Balance Butter(Melted)
2 Tbsp Vegetable Oil
1 Tbsp Vanilla Extract
¼ tsp Peppermint Extract
1 ¼ Cups Sugar
1 Cup Brown Sugar
1 Cup Gluten Free Flour
1 Cup Cocoa Powder
1 Cup Dairy Free Chocolate Chips
Frosting
2 Stick Vegan Earth Balance Butter (Room Temperature)
1 tsp Vanilla Extract
¼ tsp Peppermint Extract
Preheat the oven to 350 degrees.
In a bowl whisk together your eggs. Add in your melted butter, vegetable oil, and vanilla extract. Whisk all the wet ingredients together.
In a separate mixing bowl add your sugar, brown sugar, flour, and cocoa powder. Mix together.
Slowly add your dry ingredients into your wet. Hand Mix all your ingredients together until evenly combined. Once combined add in your cup of chocolate chips.
Grease a 8x10 pan and add your mixture using a spatula to evenly spread out your brownies. Bake for 30-40 minutes depending on if you prefer your brownies a little underdone vs a firmer brownie.
Once Brownies are cooled, begin working on your frosting. Add your butter to your electric mixing bowl. Mix until butter looks light and fluffy. Add in your vanilla extract and peppermint extract and combine.
Slowly add in your powdered sugar. I recommend one cup at a time between mixing. Continue adding powdered sugar until your frosting forms a stiff peak.
Frost brownies and sprinkle crushed candy cane on top.
